Tiramisù

Tiramisù is a typical northern Italian recipe. There are a lot of legends about its origins, seems it was made the first time as a tribute to a rich Italian family or some important character between 1600s and 1900s. The name means "Cheer me up", because it is so good, or because it has a lot of coffee in it...
Ingredients (for 6 people):
  • 500 gr. of Mascarpone Cheese
  • 150 gr. of Savoy biscuits
  • 4 eggs
  • 4 spoons of sugar
  • Coffee
  • Powdered chocolate



Preparation:

Separate the yolks from the egg whites and mix them with the sugar. Beat the whites till stiff and mix them with the previous mixture till the cream is smooth.
Prepare the coffee and leave it to cool (add some water to make the coffee less strong). Dunk in it the biscuits an place them into the baking tray. Cover with the cream and repeat two more times. Cover the last layer with powered chocolate and put the cake into the fridge for 2 hours.

Lasagne

These are the traditional Lasagne (Lasagne alla Bolognese). To make it you need to prepare before Bolognese sauce and Bechamel. A lot of variant can be invented only replacing changing the Bolognese sauce with something else, like a mushrooms or spinach cream.

Ingredients (for 6 people):
  • Gianky's Bolognese
  • Gianky's Bechamel
  • Salt
  • 200 gr. of cooked ham
  • 500 gr. of Lasagne
  • 200 gr. of Mozzarella cheese
  • 100 gr. of Parmesan cheese


Preparation
:

Boil the water and turn on the oven at 200 °C. Chop the cooked ham. Add the salt to the boiling water and put in there the lasagne for three minutes. Make a layer of bolognese in a baking pan and alternate layers of lasagne, bolognese, bechamel, chopped ham, mozzarella and Parmesan. Over the uppermost layer of lasagne put only bolognese, bechamel, mozzarella and Parmesan. Cook into the oven for 20 minutes.

Bechamel

This is the second basic ingredient for my lasagne as well as a lot of other types of oven-cooked pasta (pasta al forno).

Ingredients:
  • 50 gr. of butter
  • 2 spoons of flour
  • 500 gr. of milk
  • Nutmeg
  • Salt


Preparation:

Melt the butter in a pot then turn off the stove and add the flour. Blend the flour until make the mixture homogeneous. Turn on the stove and add slowly the milk, meanwhile add a bit of nutmeg and salt. Cook approximately for 5 minutes until reach the desired thickness.
